The raw material of yogurt is generally milk or milk powder, and some factories also use milk and milk powder to mix to achieve greater output.

The milk is delivered daily to blending tanks, where sugar and protein are added as it is stirred and heated to sweeten and thicken the yogurt.

The mixed milk after stirring will be homogenized by a homogenizer. The function of homogenization is to turn the fat globules in the milk into smaller fat globules under the action of high pressure, making the yogurt smoother.

After the homogenized milk requires a crucial step——pasteurization.

There are beneficial bacteria and harmful bacteria in the milk. The temperature environment for these bacteria to survive is different. The factory will use heat to kill the harmful bacteria. Heating the temperature to 98°C and holding it for 3 seconds can achieve the effect of sterilization.

The sterilized mixed milk will be directly transported to the fermenter, and workers also need to add starter in the fermenter. A starter is a type of bacteria specially selected for yogurt, which consumes the lactose in milk and converts the lactose into lactic acid. These bacteria can also multiply in a short period of time, until there are hundreds of billions of probiotics per gram of yogurt. The fermented yogurt needs to be sampled and tested. If the pH value of the yogurt is lower than 4.6, it means that the yogurt can be used with confidence.

The fermented yogurt is cooled, and the purpose of cooling is to reduce the reproduction rate of bacteria.

In some factories, in order to make yogurt with different flavors, various fruit pulps are added to the yogurt and mixed.

The last part is the filling process. The fermented yogurt will be transported to the filling workshop for filling. The filling equipment used in different filling forms will also be different.
