Raw material receiving and sorting

Classification: Classify fresh avocados based on size, ripeness and quality. Defective or overripe avocados are discarded to ensure only high-quality fruit is processed.

Washing: Wash your avocados thoroughly to remove dirt, pesticides and other contaminants.

Flaking and pitting

Peeling: Automatic peeling machines gently remove the skin of avocados to ensure minimal waste and consistent product quality.

Piping: A specialized corer is used to automatically remove the core (seed), leaving the pulp intact for further processing.

Saccharification and puree production

Mash: For guacamole or puree, use a mashing system to mash or grind the avocado pulp into a smooth consistency.

Puree production: Avocado puree can be processed into a creamy puree that can be used in a variety of food applications such as spreads, dips or smoothies.

Guacamole production (optional)

Blending System: Automatically blends ingredients like lime juice, salt and spices into mashed avocado to produce a guacamole with consistent flavor and texture.

Homogenize: Homogenize the mixture to ensure a smooth, even texture for the guacamole.

Pasteurization (extended shelf life)

Heat treatment: Guacamole or mashed avocado is pasteurized or hot-filled, which kills any harmful bacteria and extends shelf life without affecting flavor and nutrition.

Avocado oil extraction (optional)

Cold Pressing or Solvent Extraction: If avocado oil is produced, the avocado is processed through a cold pressing or solvent extraction method to separate the oil from the pulp. The oil is then filtered and refined.

Packaging and filling

Filling: Processed avocado products (purée, guacamole, oil or slices) are filled into a variety of packaging options such as jars, PET bottles, bags or barrels.

Sealing and Labeling: Packaging is sealed to ensure freshness and an automated labeling system labels and brands the product.

Final inspection

Quality Control: The final product undergoes a series of quality control checks including taste testing, texture consistency and packaging integrity to ensure it meets required standards.
