1.Ingredients Preparation and Mixing:

The first stage involves preparing ingredients such as milk, cream, sugar, stabilizers and flavorings. The ingredients are precisely measured and blended together to create a smooth, even base mixture.

Mixing equipment ensures ingredients are evenly distributed and in the right proportions to achieve consistency and flavor.

2.Pasteurization:

Pasteurization is the process of heating the ice cream base to a specific temperature (usually 85-90°C) to kill any harmful bacteria and pathogens. This step ensures the product is safe to eat.

Pasteurization systems use controlled heating and cooling to efficiently process mixtures and maintain product quality.

3.Homogenization:

Homogenization is a key step in reducing the size of fat globules in the mixture, resulting in a smoother texture in the final product. This is achieved by using a homogenizer, which forces the mixture through small openings under high pressure. Proper homogenization ensures that the fat content is evenly distributed, giving the finished ice cream a creamy texture.

4.Aging:

After pasteurization and homogenization, the ice cream mixture is cooled and aged in refrigerated tanks for several hours (usually 4-24 hours). Aging causes fats to crystallize and proteins to bind more efficiently, enhancing the final texture and flavor.

5.Freezing:

The aged mixture is then pumped into a continuous freezer where it is rapidly cooled and stirred. This process incorporates air into the mixture, called "spillover," which helps add volume and texture to the ice cream.

The freezing process also ensures that the ice crystals are small, resulting in a smooth, creamy texture.

6.Flavor Additions and Inclusions:

Flavorings, fruits, nuts, chocolate chips, or other inclusions can be added to the ice cream during the freezing process. Gently mix the ingredients to ensure even distribution without ruining the texture.

7.Package:

Once the ice cream is frozen it is ready for packaging. The packaging field typically includes automatic filling machines that dispense ice cream into containers (e.g. cups, cones, tubs).
